Caribbean Tilapia

Introduction

Hot, Shweet and Spicy! Hot, Shweet and Spicy!
Number of Servings: 4

Ingredients

    Marinade:
    1/2 diced red onion
    1/2 cup rice vinegar
    1/4 cup low sodium soy sauce
    1/4 cup brown sugar
    2 Tblsp. Olive Oil
    1 Tblsp. Jerk seasoning

    Pineapple Salsa:
    2 cups diced pineapple
    1/2 cup diced red onion
    1/2 cup chopped cilantro (or fresh basil)
    2 Tblsp. rice vinegar
    1 jalapeno seeded; diced
    salt to taste

Directions

Blend all ingredients of marinade in food processor and marinate fish for one hour.

Mix all Pineapple salsa ingredients and chill in fridge until fish is done cooking.

Discard marinade and cook tilapia at 400 degrees for 35-40 minutes. Top with salsa and serve.
