Summer squash, diced (I used about three cups)
1 medium bell pepper, green, diced
1 medium white or yellow onion, roughly chopped
2 Tbsp or so Olive Oil
Cracked pepper to taste
Oregano/Thyme to taste
Cook until onions have softened and the vegetables are tender, about ten minutes.
Add seasonings to taste. Cracked pepper is a must!
Serve hot. Makes about 6, half-cup servings.
