Eggplant Italiano

Introduction

Ingredients

    1.25 pounds of extra lean turkey breast
    2 cans stewed italian style tomatoes
    1 chopped onion
    1 chopped bell pepper
    2-3 cloves of chopped garlic
    one large eggplant, peeled and cubed.
    One package of fresh sliced mushrooms(washed)

Directions

Brown the turkey with the onion, peppers, garlic and mushrooms. Drain. Boil the eggplant in a smaller pot until tender. Drain. Mix the eggplant with the meat mixture and pour in the two cans of stewed tomatoes. Simmer on medium heat about 20 minutes or so. Enjoy.
