Number of Servings: 12


    1 1/2 C wheat bran (all bran cereal)
    1 C nonfat milk
    1/2 C unsweetened applesauce
    1 large egg
    1/3 C brown sugar
    1/2 tsp. vanilla extract
    1/2 C white flour
    1/2 C wheat flour
    1 tsp. baking soda
    1 tsp. baking powder
    1/2 tsp. salt
    2 C frozen blueberries


Heat oven to 375 degrees. Grease 12 muffin cups or line with paper liners. Mix milk and bran cereal. Let sit for 10 minutes. Meanwhile mix dry ingredients in separate bowl. Add applesauce, egg and vanilla to bran mixture and mix. Then stir in flour mix just until blended. Fold in frozen blueberries or use other frozen fruit (blackberries is great too). Scoop into muffin cups.

Bake in preheated oven for 20-25 minutes or until tops spring back when lightly tapped.
