Gluten Free Crustless Pumpkin Pie

Introduction

A great side dish or dessert for those trying to eliminate gluten from their diet, and eat the same food as their family. A great side dish or dessert for those trying to eliminate gluten from their diet, and eat the same food as their family.
Number of Servings: 8

Ingredients

    1 Can pure pumpkin (15 oz)
    2 eggs
    1/2 C milk ( I use Silk Almond milk)
    1/4 C corn starch
    1/2 C granulated sugar
    1/4 tsp pumpkin pie spice
    3/4 tsp ground cinnamon

Directions

Combine all ingredients and mix well. Pour into a greased (Pam, butter, what you use) pie plate and place in a 350 oven for 40-50 minutes. Until just set in the center. Let cool for 10 minutes on a wire rack before serving.

Makes 8 wedges

  • Thanks for making my life simple Only thing different is I cook it in 8 small custard dishes in pan of water = individual servings and easily taken to potlucks etc in zip lock baggie for protection from cross contamination. - 12/14/11
