A very refreshing and light summer dessert!

Number of Servings: 2

Ingredients

1 cup of fresh or frozen blueberries
    1/4 c. water
    3 T. sugar
2 thin slices of fresh lemon
    5 T. Lite Cool Whip

Directions

If berries are fresh, freeze. Stir sugar into water until dissolved. Put frozen berries in food processor along with sugar and water mixture and lemon slices. Puree until smooth (although if you have a few berry lumps, they add interest to the texture.) Remove mixture to an airtight container and freeze 20 minutes. Break up with a fork, then stir in Cool Whip.
