MarkNJayde's Revamped Meatball Sub

Introduction

Mark loves meatball subs but they are definitely not healthy! This is our reduced calorie and fat version. Also works well using leftover cooked ground turkey by crumbling it on the sandwich instead of making into meatballs. Use 99% Fat free ground turkey to make even healthier.

Compared to Subways 6" meatball sub which has;

Ingredients

    12 oz lean ground turkey or chicken*
    1/2 Cup chopped onion
    2-6 cloves of garlic depending on preference
    3 thin buns, separated into halves
    3 oz shredded part skim mozzarella
    3/4 Cup spaghetti/marinara sauce
    1/4 Cup plain bread crumbs
    1/2 Tbsp homemade poultry seasoning blend or whatever you have on hand

    *Recipe calculated using 93% turkey.
    **Recipe calculated using Earth Grains 100% Natural Thin Buns.

Directions

1. Preheat oven to 400 degrees F.

2. Chop vegetables. Mix ground turkey with onions, garlic, bread crumbs, and seasonings.

3. Form into meatballs approx. 12, place on baking sheet sprayed with Pam, and put into the fridge for about 15 mins. This helps the meatballs hold together better during cooking.

4. Put meatballs into oven for 25 mins. After removing turn oven to broil.

5. Heat spaghetti sauce slightly. Toast thin buns. Place four meatballs, two on each half, on buns, top with 1/4 cup spaghetti sauce or less to taste, and one ounce of shredded cheese.

6. Place "subs" back in oven under broiler for 2-5 mins or until the cheese melts.

7. Enjoy!
