Introduction

Ingredients

    1 14.5 oz can whole tomatoes, cut in quarters
    3 cloves garlic, diced
    1 tsp paprika
    1 tsp tomato paste
    1/8 cup olive oil
    2 cups baby spinach
    3 large eggs
    salt to taste

Directions

Place tomatoes, garlic, paprika, tomato paste, and oil in medium saucepan. Bring to a simmer and cook, uncovered, over low heat for about 15 minutes, stirring occasionally, then add spinach slowly. Cook another 15 minutes over low heat until thick, stirring occasionally. Add salt to taste.

Break three eggs over tomato sauce. Gently break yolks with a fork. Cook on low heat, covered, for about 4-5 minutes, until eggs are set.

Makes 3 servings.
