Lois' Low Fat, Low Sodium Black Bean & Corn Salsa

Ingredients

1 can Del Monte Diced Tomatoes, No Salt added (3 1/2 servings),
1/2 C. canned No Salt Added Whole Kernel Corn
3/4 C. Canned Low Sodium Bush's Black Beans
1/2 C. chopped onion
1/2 C. chopped green pepper
1/2 tsp. paprika
1/4 tsp. chili powder
1/4 tsp. garlic powder
1/4 tsp. onion powder
OPTIONAL: celery seed and cumin to taste.
Directions
Combine all ingredients in bowl with tight-fitting bowl. Mix gently, but thoroughly.
(Optional: Drain liquid from tomatoes into small sauce pan. Add raw chopped onions and peppers and cook until crisp-tender. Allow to cool before combining with ingredients.)
May be served immediately OR chilled before serving.
Serve with Baked Scoops for a low-fat treat!
Other suggestions:
*Serve with with taco or garden salad or Gazpacho.
*If you are diabetic or eating a LOW carb diet, you can decrease the amount of corn or leave it out altogether. *Increase the amount of black beans or veggies if you wish. *If you like it hotter, try adding a can of green chilies OR diced fresh Jalapenos or other hot peppers.
