Lentils with Spinach

Number of Servings: 5

Ingredients

    20 oz fresh baby spinach
    1 large onion
    1 tbsp olive oil
    3 tbsp minced garlic
    1 cup dried green lentils
    1.25 tsp salt
    1 tsp ground cumin
    3/4 tsp black pepper (or to taste)
    1 tsp red pepper (or to taste)
    1 tsp curry powder

Directions

Wash and chop spinach. Chop onions. Saute onions and garlic in olive oil until onions are clear. Add lentils and 3 cups of water. Boil then simmer covered for about 25 minutes or until lentils are tender. Add spinach, salt and cumin. Stir then simmer covered for 10 minutes or until spinach is tender. Add black pepper, red pepper, and curry powder. Stir to mix. Makes 5 1-cup servings.
*Can serve over brown rice (not included in calories)
