Chicken and Mushroom Soup

Introduction

Number of Servings: 4

Ingredients

    1 cup mushrooms- I recommend portabello
    1 Cup Chopped onion
    2 Tbsp Olive oil
    3 cups vegetable broth
    1 cup carrots sliced thin
    2 Tbsp celery chopped
    1 Tbsp red wine vinegar
    1 cup cooked chicken breast(broiled)cooled and chopped

Directions

In saucepan, saute the mushrooms and onions in the olive oil until browned about 10 minutes.
Add the broth, carrots, celery, vinegar bring to a boil.
Reduce heat and simmer for 20 minutes.
Add the cooked chicken. Heat for two minutes.
Serves four
