IntroductionThese are loaded with blueberries! These are loaded with blueberries!
1/2 cup sugar
1/4 cup butter
1 egg white
2 cups all-purpose flour
2 teaspoons baking powder
1/2 cup milk (I used whole milk)
1 teaspoon vanilla
2 cups fresh or frozen blueberries
Bake in paper-lined or buttered muffin tins at 350 degrees for about 25 minutes. Sprinkle with coarse sugar before baking, if desired.
Makes about 18 muffins. Serving size is one muffin.
