Ingredients

    Oat Bran, 2.5 cup
    almond flour, 0.5 cup
    Amaranth Flour, 0.5 cup
    Flax Seed Meal (ground flax), 1 cup
    Baking Powder, 3 tsp
    Salt, .5 tsp
    Oranges, 2 fruit (2-5/8" dia)
    Brown Sugar, .75 cup, packed
    Braum's Skim Milk, 1 cup
    *Canola Oil, .5 cup
    Egg, fresh, 2 large
    Baking Soda, 1 tsp
    Cranberries, dried, sweetened (craisins), 1.5 cup

Directions

Makes 30 standard size muffins Pre heat oven to 375F

In a large bowl combine oat bran, flax, flours, baking powder and salt. Mix well, set aside. In blender or food processor, combine oranges, brown sugar, eggs, milk, oil, and baking soda. Blend well, pour into the dry ingredients, mix until just combined. Add Craisins, stir to blend well. Fill paper lined muffin tins almost to the top. Bake 18-20 minutes or until a toothpick inserted in the center comes out clean. Cool 5 minutes in the pan before removing to a cooling rack to finish cooling. These freeze really well, just pop in the toaster oven or microwave to reheat.
