Spinach Crumb Casserole

Ingredients

1 (10 oz) package chopped spinach, thawed and squeezed dry
1 egg, beaten
1/2 cup skim milk
1/4 cup shredded cheddar cheese
1 Tbsp chopped onion
1/4 cup seasoned bread crumbs
1 Tbsp Smart Balance Light, melted
Directions
1. Preheat oven to 350 degrees.
2. Saute onion until soft, about 5 minutes.
3. In a large bowl, combine the spinach, egg, milk, cheese and onion. Pour into a greased 1 quart baking dish.
4. Combine bread crumbs and butter. Sprinkle over the top.
5. Bake uncovered for 25 to 30 minutes.
