1 small yellow onion, chopped
1 (14.5 ounce) can reduced sodium diced tomatoes, drained
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 (5 ounce) can reduced sodium sliced mushrooms, drained
salt and pepper to taste
1/4 cup parmesan cheese
2. Stir in the tomatoes, spinach and mushrooms. Continue cooking until the spinach is wilted, about 5 -10 minutes.
3. Season with salt and pepper.
4. Stir in the cheese, and allow to melt slightly before serving.
