2 c White whole wheat flour
1 c Sugar
2 tsp Baking powder
1 tsp Baking soda
1/2 tsp Salt
2 tsp Cinnamon
2 c Shredded carrot (about 4)
1/4 c Canola oil
1 c Yogurt (fage)
1/2 c Crushed pineapple (drained)
1/2 c Coconut (sweetened or unsweetened)
2 tsp Vanilla extract
1 1/2 packages Light cream cheese
1 c Powdered sugar
1 Orange zested
1 tbl Orange juice
Combine dry ingredients (first 6).
Combine wet ingredients (last 7).
Combine dry and wet ingredients.
Bake for an hour (give or take), until toothpick comes out clean.
Mix all ingredients with a mixer until creamy and combined
