Lentil Burrito Mixture

Introduction

Change up the taste of this mixture every time by using different flavors of salsa. I used Newman's Own Mango Salsa and want to try the Pineapple next! Number of Servings: 4

Ingredients

    1 cup dried lentils
    1 small onion, chopped
    1 clove garlic
    1 tbsp chili powder
    2 tsp ground cumin
    1 tsp dried oregano
    2.5 cups chicken broth
    8 oz salsa (or more)

Directions

1. Saute onions and garlic until tender.
2. Add lentils, chili powder, cumin, and oregano. Stir for 1 minute.
3. Add chicken broth and bring to a boil.
4. Reduce heat and simmer for about 40 minutes or until lentils are tender.
5. Uncover and cook for about 6 more minutes until mixture is thickened.
6. Mash lentils slightly and stir in salsa.

    I make this also in my crock pot. It has lentil and the same amount of brown rice in it. I use beef broth instead of chicken though. It is an amazing taste! - 11/12/09
