1 - whole wheat pocket pita
1 tbsp olive oil
1/4 cup part skim shredded mozzarella cheese
1/8 cup low sodium pizza sauce
14 pieces (1 serving) turkey pepperoni
1 ripe tomato, sliced (see instructions)
6 fresh basil leaves (or 1 tbsp dried)
Evenly divide the pizza sauce between both pizzas, should be think layer of sauce. Chiffonade your basil and sprinkle on both pizzas on top of the sauce. Add 7 slices of pepperoni per pizza.
Core the tomato. Slice lengthwise, lay on flat side. Slice into about 5 even slices for each side. Place 5 slices on each pizza pointing from the center out to the edge.
Bake at 425 degrees for about 3 minutes or until crispy around the edges. 2 pizzas are 1 serving! For less fat and less sodium, eliminate the cheese entirely. Still makes a great pizza! You can also use green tomatos or a tomatillo for variety of taste and color.
