Directions

Makes 4 servings

Split chicken breasts in half, length-wise.

In a medium-sized bowl, combine minced garlic, grated cheese, pepper, and coarsely chopped ham slices.

Toast 1 slice of wholewheat bread in toaster. Place it in food processor with oregano and basil to make seasoned bread crumbs.

Fill the chicken breasts with equal amounts of the cheese/ham mixture. Seal with 1-3 toothpicks.

Whip egg whites with fork until frothy, about 30 seconds to 1 minute. Dip filled chicken pieces in egg white.

Transfer bread crumbs to a plate and dip the chicken (which has been coated in egg white) into the bread crumbs.

In a large frying pan, heat the olive oil. Add the chicken pieces and brown on medium heat, until golden on both sides.
