Introduction

Flour-less/Gluten-free cookies. You can add other spices as desired to change the flavor. Good basic cookie. Fat is high but all healthy fats from nuts. Flour-less/Gluten-free cookies. Number of Servings: 6

Ingredients

    1/2 tsp. baking soda
    1 tsp. vanilla
    1/2 tsp ground cinnamon
    1 tbsp molasses
    1/4 cup turbinado sugar
    1 c. almond meal/flour
    1 egg
    1/2 tsp. grated lemon peel

Directions

Preheat oven to 350. Grease cookie sheet with grapeseed oil. Stir together almond meal, sugar, cinnamon and baking soda in a medium bowl. Add beaten egg, molasses and vanilla extract and mix well. Spoon dough into 1 inch apart on cookie sheet. Bake until puffed, about 10 min. Cool cookies on baking sheet before transferring to rack to cool completely.
Makes about 1 dozen cookies. 2 cookies per serving are approx. 25 grams.
