Broccoli Bake

Introduction

This is very rich. Great with grilled chicken and corn on the cob. This is very rich. Great with grilled chicken and corn on the cob.
Number of Servings: 6

Ingredients

    1 pound frozen broccoli cuts
    1 serving Cream of "something" Soup
    2 Tbsp skim milk
    1 cup shredded lowfat cheddar cheese
    1/3 cup reduced fat whole wheat baking mix
    2 Tbsp wheat germ
    1 1/2 Tbsp butter

Tips

Cauliflower or California blend vegetables can be substituted for the broccoli.

Directions

Thaw broccoli, or cook just briefly. Place in a 1 1/2 quart casserole dish. mix the soup, milk and 1/2 cup cheese. Pour over broccoli. Top with remaining 1/2 cup cheese. Mix baking mix, wheat germ and butter until crumbly. Sprinkle over cheese. Place in a 400 degree preheated oven and bake for 25 to 30 mintues. Serves 6.
