Roasted-Tomato Sauce

Introduction

This is a great homemade tomato sauce if you have some fresh local plum tomatoes! It takes a while but makes the whole house smell! This is a great homemade tomato sauce if you have some fresh local plum tomatoes! It takes a while but makes the whole house smell!
Number of Servings: 8

Ingredients

    20 plum tomatoes, cut in half and de-seeded (easy with a spoon to scoop out)
    2 Tbsp olive oil
    1 Tbsp dried marjoram
    1 Tbsp dried ground oregano
    4 cloves garlic, minced
    1.25 c chicken broth

Directions

Preheat oven to 325. Spray baking pan with cooking spray. After cutting and seeding the tomatoes, arrange in baking pan (I use glass) with cut side up. Sprinkle (or spritz) the olive oil over the tomatoes. Then sprinkle spices and garlic over tomatoes. Adjust spices, olive oil and garlic to taste as needed. (Nutrition counts are for values indicated.) Roast in oven for 2 hours. Then increase temp in oven to 400 for another 15-30 minutes (don't let them burn, but a little black is good roasting!) Remove tomatoes and let cool some. You can then mill the tomatoes to remove the skins, but I just use my blender and put in all. Add about 1/4 to 1/2 cup of chicken broth and puree. Put in saucepan and add remainder of chicken broth (adjust for consistency desired). Simmer for about 5 minutes. Store in fridge or freezes well! Use to make pizzas, pasta, etc.
