LOLO's Cold Bean & Feta Dip

Introduction

My sister made 1/2 this recipe for our family of 15 people, and it was a HIT! It's so easy and for a last minute, low-maintenance, party dish. My sister made 1/2 this recipe for our family of 15 people, and it was a HIT! It's so easy and for a last minute, low-maintenance, party dish.
Number of Servings: 30

Ingredients

    2 cans black beans, drained and rinsed
    16oz frozen sweet corn, thawed
    Small bunch of scallions, chopped
    8oz feta cheese, crumbled
    4tsp sugar
    1/2 C olive oil
    1/2 C apple cider vinegar

Directions

In dish or bowl, blend beans, corn, scallions, and feta. Set aside. In small bowl, mix ( I like to whisk ) sugar, olive oil, and vinegar. Pour over bean mixture and blend. Refrigerate for about 60 minutes or so for the dip to be at it's best! I like to serve with Frito Scoops, but use anything you want to dip!
