Meatloaf Muffins II

Introduction

This is a revision of SGASKILL's Meatloaf Muffin recipie. I've switched out the bread crumbs for parmesan cheese and regular brown sugar for Splenda brown sugar blend. Ingredients

    Ground beef, lean, 16 oz
    stewed/diced tomatoes, 1 cup
    Ketchup, 4 Tbsp
    Heavy whipping cream, 2 Tbsp
    Parmesan cheese, grated, 1 cup
    Egg, 1 large
    Worcestershire sauce, 3 tsp
    Salt, 1 tsp
    Pepper, 1 Tbsp
    Cider Vinegar, 1 Tbsp
    Splenda Brown Sugar blend, 6 tsp packed

Directions

This makes 12 small meat muffins. Very small. My hubby ate five, I ate three. We both would have liked one more, but the kiddies wanted to eat!! If you don't like sweet/savory, skip the topping or switch it for something else.

Instructions exactly like SGASKILL's recipe:

Mix and put aside: 1 Tbsp ketchup, vinegar and brown sugar

Combine all other ingredients, spoon into 12 muffin cups. Spoon ketchup mix over muffins.

Bake 350 for 30 min. Put a baking sheet under it or be prepared to clean your oven later!
