Mary's Turkey Meatloaf

Introduction

Had to use up some ground turkey so came up with this mixture! It is tasty and you can add or delete seasonings according to your family's preference. It is also a good make-ahead meal as it freezes well, and you have single-serving portions. Had to use up some ground turkey so came up with this mixture! Ingredients

    2.5 lbs. lean ground turkey
    1/2 cup chopped green pepper
    1/2 cup chopped onion
    1/2 cup chopped portabella mushrooms
    1/2 cup eggbeaters
    1/2 cup quick cooking Quaker oatmeal
    1/2 cup 1% milk
    1 tbsp. dried basil
    2 tsp. Italian seasoning
    1 tbsp fennel seeds
    1 tsp salt
    1/2 tsp. black pepper
    2 tsp. granulated garlic (or two-three cloves fresh garlic, minced)

Directions

Mix all ingredients in a large bowl. Make 8 small meatloaves, each weighing about 6.2 oz. Place on a baking sheet and bake in a preheated 350-degree oven for one hour.
