Carol's Eggplant/Black Bean Dish

Introduction

Can be spiced up more with red pepper seeds. Also can add salt and pepper.
A little hot sauce would be good.

Number of Servings: 8

Ingredients

    2 Tbsp. Olive Oil
    1 1/2 C. Fresh, diced Eggplant (I did not peel)
    2 C. Zucchini (either dice or shred)
    1 medium Onion, diced
    3 cloves fresh Garlic, chopped
    2 1/2 C. Black Beans (cooked w/o salt)
    2 C. fresh Tomatoes
    1/2 C. Green Pepper, chopped

Directions

Saute eggplant, zucchini, onion, garlic and green pepper in olive oil until almost tender.
Add black beans and tomatoes.
Simmer 20 - 25 minutes.
Add seasonings.

Serve over rice or pasta.

Makes 8 servings of about 3/4 cup.
