Texas Caviar (3 bean, corn) 1/2 cup

Introduction

Vinegar/Oil based chip dip or salad topping. Vinegar/Oil based chip dip or salad topping.
Number of Servings: 25

Ingredients

    1 cup black beans
    1 cup pinto beans
    1 cup blackeyed peas
    1 cup celery (chopped)
    1 cup red pepper (chopped)
    1 cup green pepper (chopped)
    1 large onion
    1/3 cup apple cider vinegar
    1/3 cup olive oil
    1 cup splenda (or sugar)

Directions

Chop and dice all vegetables. Combine in a bowl with the remainder of raw ingredients. In a pan heat oil, vinegar, and splenda to a boil. Pour vinegar/oil mixture over the vegetables and allow to marinate. Keep refrigerated until use.... Delicious with tortilla chips as a dip or as a salad topper.
