Introduction

Ingredients

    16 oz chicken breast, cut into 1-inch cubes
    1 Tbsp olive oil
    1 cup onion, sliced
    1/2 cup celery, sliced (optional)
    1/2 cup green pepper, sliced (optional)
    1 Tbsp garlic, minced
    15 oz can diced tomatoes
    8 oz can tomato sauce
    1/2 tsp salt
    1/4 teaspoon pepper
    1 tsp basil
    1/2 tsp oregano

Tips

This can also be made with bone-in chicken (about 4 chicken quarters or 2 large bone-in breasts). Brown chicken first, then remove from pan and add vegetables. Once they are fragrant, add the remaining ingredients along with the bone-in chicken back to the pan. Allow to simmer for 45 minutes, adding more water if necessary.


Directions

Heat the oil in a medium skillet. Add the chicken, onions, green pepper, celery and garlic in the same pan until they are tender and fragrant. Add the remaining ingredients. Stir it up and bring it to a boil. Reduce the heat to medium low and let the pan simmer for about 15-20 minutes, stirring occasionally.
Serves 4.
