100 Calorie Creamy Spaghetti Squash Alfredo

Introduction

Creamy, delicious and under 100 calories!! This is the best for satisfying a cheesy craving without blowing my diet. If you've never had spaghetti squash, give it a try!! I bake one on the weekends and use it in different dishes throughout the week. It's a great substitute for spaghetti. Creamy, delicious and under 100 calories!! Number of Servings: 1

Ingredients

    1 cup precooked spaghetti squash
    1 wedge of Laughing Cow Light Cheese (the new Mozzarella Sundried Tomato Basil is my favorite, but any flavor will do)
    1Tbsp Parmesan Cheese
    Salt & Pepper to taste

Directions

Take 1 whole spaghetti squash, poke it a few times with a fork and bake at 350 degrees for about 45-60 minutes, until a knife is easily inserted. Allow squash to cool then cut lengthwise and spoon out seeds. I use a fork to scrape out the strands of squash then refrigerate.

Place 1 cup of precooked squash, 1 wedge of Laughing Cow cheese and 1 Tbsp parmesan cheese in a bowl and microwave for 1 to 1 1/2 minutes. Stir and enjoy!!
