Creamy Green Dressing

Introduction

Number of Servings: 24

Ingredients

    1 cup canola oil
    2 Tbs. cider vinegar
    1 tsp. honey
    1 cup fresh spinach
    2 Tbs. fresh parsley
    1 tsp. fresh basil (1/4 tsp. dried)
    1/4 tsp. dried marjoram
    1/2 tsp. salt
    1 garlic clove, minced
    1 cup buttermilk

Directions

Add all ingredients to blender, except buttermilk, and blend for 1 minute. While the blender is still running, slowly pour in the buttermilk. Blend for 1 minute more, until mixture begins to thicken. Chill at least 30 minutes before serving. Keep refrigerated, tightly covered, up to one week.

Yields 3 cups. One serving is 1/8 cup, or 2 Tbs.
