I took a recipe I found at Allrecipes, and made substitutions to make it healthier. These are moist and flavorful, and not TOO bad for you! Ingredients

1 1/4 C all-purpose flour
1/4 C ground Fiber One cereal
1/2 C brown sugar
1/4 C granulated sugar
1 t baking soda
1 t ground cinnamon
1/2 t salt
1 egg, lightly beaten
1 T Canola oil
1/2 C unsweetened applesauce
1/4 C milk
1 T lemon juice
1 t vanilla extract
1 C shredded zucchini
1/4 C mini semisweet chocolate chips
1/4 C chopped walnuts (optional)
Directions
Makes 12 regular size muffins.
In a bowl, combine flour, cereal, both sugars, baking soda, cinnamon and salt. Combine the egg, oil, applesauce, milk, lemon juice, and vanilla. Stir the wet ingredients into the dry ingredients just until moistened. Fold in zucchini, chocolate chips, and walnuts (if using). Fill greased or paper-lined muffin cups two-thirds full. Bake at 350 degrees for 20-25 minutes or until muffins test done.
