Blueberry Stumble Pie

Introduction

We went blueberry picking and HAD to make pie!! This is easy, delicious, but NOT low in calories. I put this in my counter in the morning
so it allowed me to still keep the calories somewhat in tact. ;-)

Ingredients

    2 - 9 inch ready made pie crusts
    3/4 cup white sugar
    3 TBS. cornstarch
    1/4 tsp. salt
    1/2 tsp. ground cinnamon
    6 cups fresh blueberries
    1 TBS. Smart Balance 50/50

Directions

Makes 8 servings.

Preheat oven to 425 degrees.
Mix the sugar, cornstarch, salt, and cinnamon. Then sprinkle over fresh blueberries and gently toss.
Line one pie crust in 9 inch pie dish. cut second crust into 1/2 inch wide strips. (I use my french fry cutter to get the ripples.)
Pour the blueberry mixture in crust. Dot the top with the Smart Balance 50/50 and make a lattice design with the strips, crimp and flute the edges.
Bake pie on cookie sheet on lower shelf of oven for 50 minutes, or until crust is golden.
