Introduction

Quick and easy moist individual carrot cakes. I adapted this simple recipe using a box carrot cake mix. It is low in fat and cholesterol but still gives a healthy dose of vitamin A. Ingredients

    Betty Crocker Super Moist Carrot Cake Mix 18oz box
    Crushed pineapple in natural juice 20 oz can, undrained
    Shredded or grated carrots 2 c

Directions

Mix ingredients together. Spray cupcake pans with nonstick spray. Fill cups almost full. Bake at 350 degrees F for 25 to 30 minutes, checking for doneness. Makes 18 servings.
