Shrimp & Orzo (Cooking Light)

Number of Servings: 4

Ingredients

    1 c orzo pasta
    1 1/2 lb shrimp
    1 c chicken broth
    1/2 c white wine
    2 tbsp chives
    1/4 tsp thyme
    1/4 tsp black pepper
    2 tsp olive oil
    1/2 onion chopped
    cooking spray

Directions

Spray medium sauce pan with cooking spray to sautee onion. Combine white wine, chicken broth, thyme in sauce pan and bring to a boil. Reduce to simmer for 15 min, leave covered.
When done, add 2 tbsp lemon juice and chives.
Cook shrimp in olive oil in pan. Add to orzo and serve!
