Chicken Tikka Masala

Chicken Tikka Masala

Cut down on half the salt, and the amount of food created for 4 servings was rather high, so cut each serving in half. Also, removed the jalapeno, since it turned out spicy enough. (If you prefer more heat, feel free to add the jalapeno in).

Ingredients

    Chicken and marinade:

    1 C yogurt
    1 T lemon juice
    2 tsp ground cumin
    1 tsp ground cinnamon
    2 tsp cayenne pepper
    2 tsp freshly ground black pepper
    1 T minced fresh ginger
    2 tsp salt, or to taste
    3 boneless skinless chicken breasts, cut into bite-size pieces
    4 long skewers

    Sauce:

    1 T butter
    1 clove garlic, minced
    2 tsp ground cumin
    2 tsp paprika
    1.5 tsp salt, or to taste
    1 (8 oz) can tomato sauce
    1 C heavy cream
    1/4 C chopped fresh cilantro

Directions

1. In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 2 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour.

2. Preheat a grill for high heat.

3. Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.

4. Melt butter in a large heavy skillet over medium heat. Saute garlic for 1 minute. Season with 2 teaspoons cumin, paprika, and 1.5 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

  • I was afraid this would be too spicy, but was pleasantly surprised. The serving size was a little small (0.5 cup each that was mostly sauce) but a good change from the usual fare. - 8/7/10
