Asparagus Frittata

Ingredients

    2 tablespoons dehydrated minced onion
    1/2 teaspoon dehydrated garlic
    1/4 cup water
    2 whole eggs
    4 egg whites
    16 thin asparagus spears
    2 tablespoons minced fresh parsley
    1 teaspoon Old Bay Seasoning
    1/4 teaspoon marjoram
    Tabasco sauce

Directions

Preheat oven to 400. Line an 8" piepan with parchment or foil. Put a nonstick skillet on the stove and preheat on medium heat.

Break eggs into a large bowl. Add the egg whites.

Mix together the water, dried onion, and dried garlic and let stand about 5 minutes while you prepare the asparagus. Snap off woody ends from the asparagus and cut into 1" pieces.

Put the water, onion, garlic, and asparagus into the skillet and stir fry over medium high heat until asparagus is partially cooked and water is evaporated. Take pan off heat

With electric mixer beat eggs, add parsley, Old Bay Seasoning, and marjoram, and beat again. Then, with a spoon stir in the cooked asparagus, onion, and garlic mixture. Pour into prepared pie pan. Bake at 400 for about 20 minutes or until Frittata is puffy and golden. Cut in half to serve (If you used foil, you may have to serve the frittata half with the foil attached). Serve with Tabasco sauce.
