Cheesy Tuna Pasta

Introduction

Whole wheat pasta, tuna, and cheese. Whole wheat pasta, tuna, and cheese.
Number of Servings: 2

Ingredients

    1/4 diced yellow onion
    2 tsp mustard - I prefer dijon
    1 tbs mayo - I use Kraft Mayo w/Olive Oil
    1 cup shredded cheese - Reduced fat Mexican blend (Sargento)
    2oz fat free cream cheese
    2 cups broccoli & Cauliflower
    1/8 cup diced pickled or fresh jalapeno (nutrition facts based on pickled)
    4oz (dry) whole wheat pasta
    8oz low sodium tuna

Directions

Makes 2 large servings

Boil pasta for 9-11 minutes or until done

While pasta is boiling mix tuna, mayo, mustard, onion, jalapeno, shredded cheese in a bowl. Cut cream cheese into small cubes and add to tuna mixture.

Cook broccoli and cauliflower to your preference. I like mine fully cooked, but still crunchy. I typically use frozen veggies and just bring them to a quick boil. Once boiling, I strain water and set aside until pasta is done boiling.

Once pasta is done boiling, strain water and return to pot.
Add tuna mixture and veggies to pasta and mix together. Heat until cheese is melted.

Add salt and pepper to taste.
