Orzo and Roasted Peppers

Introduction

My wife loves the Orzo salad from our local grocery store. However it is floating in oil and we are trying to track our food. So I came up with this recipe with less oil by using Newman's Own Light Balsamic Vinaigrette. It is cool and refreshing on a hot summer day. Hope you enjoy. Ingredients

    Red Peppers, Roasted, Cento, 7 oz
    Orzo, uncooked, 8 oz
    Roasted Garlic, 6 cloves
    Mezzetta Non-Pareil Capers, 3 oz jar drained
    Italian Herb Seasoning mix, 1 tsp
    Basil, dried, 2 tsp
    Lemon Zest (Shredded Lemon Peel), 2 tsp
    Fresh lemon juice, 1 Tbl
    Pepper, black, 1 tsp
    Newmanís Own Lighten Up Light Balsamic Vinaigrette Dressing 2 Tbl
    Olive Oil 2 Tbl

Directions

Cook Orzo per package instructions. Roast the garlic. I use those really convenient already peeled cloves you can buy at the grocery store. You can find instructions for roasting here

Drain jar of roasted peppers and cut if required to pieces 1/2" to 3/4". Mash the garlic cloves mix in. Add other ingredients and mix. Chill and serve. Makes ~6 1/2 cup servings.
