Low Fat Cassulet in a Hurry

Introduction

Adapted from the Ainsley harriott low fat book.
I have swapped the oil to oil spray and the stock to a low sodium stock.
Cassoulet is a wonderful hearty dish from the Languedoc region of France. Meat, beans and spices are braised until tender and the dish IS topped off with crunchy breadcrumbs. Like paella, it can be made in many different styles. This version is quick and low fat.

Ingredients

    Oil Spray
    1 onion, chopped
    2 garlic cloves, finely chopped
    250 g (9 oz) cubed lean pork
    400 g can chopped tomatoes
    2 carrots, diced
    150 ml red wine
    150 ml lamb stock
    1/4 teaspoon each dried, rosemary, thyme and parsley
    400g can haricot beans, drained and rinsed
    2 tbsp fresh white breadcrumbs
    salt and freshly ground black pepper
    chopped parsley to garnish

Directions

1 Heat the oil in a large pan and cook the onion and garlic for 3 - 4 minutes until softened. Add the pork and stir fry for 5 minutes.

2 Stir in the tomatoes,carrots, wine, stock and herbs, then cover and cook over a medium heat for 20-25 minutes until the meat is tender.

3 Pre-heat the grill to high. Stir the beans into the pan, season wlth salt and pepper and transfer to an ovenproof serving dish Sprinkle over the breadcrumbs, then grill for a few minutes until the topping is golden. Serve with fine green beans (not included) and a fruity red wine (also not included)
