Clean Eating Rotini with Peas, Carrots & Goat Cheese

Ingredients

    2 cups Fiber Gourmet light rotini or other light pasta
    2 cups frozen mixed peas and carrots
    2/3 cup goat cheese
    1 tbsp. fresh parsley
    1 1/3 cups Clean Eating Simple Saffron Broth

Directions

Cook 2 cups pasta and add diced carrots & peas to the cooking water during the last 3 minutes. Drain and toss with 1 1/3 cups Simple Saffron broth and 2/3 cup crumbled goat cheese. Top with 1 tbsp. chopped fresh parsley. Makes 4 servings.
