Reduced Sugar Blueberry Coffee Cake

Introduction

Number of Servings: 12

Ingredients

    2 c Flour
    3/4 c splenda
    2 tsp of baking powder
    1/4 tsp salt
    1 egg, beaten
    1/2 c plus 2 tbsp. milk
    1/4 c plus 2 tbsp butter, melted and cooled
    2 tbsp. low fat yogurt
    1 1/2 c frozen unsweetened blueberries

    Streusel
    1/3 c sugar
    1/3 c flour
    3 tbsp. butter
    1/2 tsp. cinnamon
    1/4 cup chopped walnuts

Directions

In a large bowl, combine the flour, splenda, baking powder, and salt.

In a separate bowl, whisk together the milk, yogurt and egg.

Pour the wet mixture over the dry and stir three times. Add the melted butter and stir until just barely combined.
Gently fold in the blueberries, then spread the batter into a 9 inch sq baking pan.

In another bowl, combine sugar, nuts, and flour, and cut in the butter until crumbly. Sprinkle over batter.

Bake at 375 for 40-45 min or until a wooden pick inserted near the center comes out clean.
