Core Balance Creamy Cilantro Chicken

Introduction

From The Core Balance Diet, adapted. The SP recipe program didn't allow me to add 3/4 cup heavy cream (!) as the recipe calls for, so I substituted chicken broth (which was how I made it). Ingredients

    4 boneless, skinless chicken breast halves
    1 tablespoon olive oil
    4 ounces cream cheese, cubed
    3/4 cup rich chicken broth
    3/4 cup fresh cilantro
    Juice from 1 lime
    Salt and pepper

Directions

Season chicken with salt and pepper. In large skillet, brown chicken in olive oil, 3-4 minutes on each side. Remove chicken from pan and set aside. Add cubed cream cheese, broth, lime juice, and 1/2c fresh cilantro to pan. Reserve 1/4 cup cilantro for garnish. Stir all ingredients over medium heat until mixture is melted and smooth. Add chicken back into pan. Cover and cook on low heat for an additional 10-15 minutes ur until chicken is cooked through. Sprinkle with additional cilantro. Remove from heat and serve. Leftovers may be refrigerated for up to three days.
