Introduction

low carb chicken enchiladas kinda. lots of potassium from the spinach for those pesky leg cramps! low carb chicken enchiladas kinda. lots of potassium from the spinach for those pesky leg cramps!
Number of Servings: 8

Ingredients

    3 lbs chicken breast, large cubes
    2 bunches spinach
    1 onion diced
    2 tbs evoo
    29 oz rosarita enchilada sauce
    8 oz spinach

Directions

pre-heat oven 350
cube chicken
heat oil in large fry pan
cook chicken till almost done, add onion
meanwhile wash, drain and coarsely chop spinach
cook till chicken done
in 9x13 backing pan put half the spinach
then all chicken and onion
then top with remaining spinach
pour on enchilada sauce
top with cheese
cover bake 30 min
uncover bake 10 min
