Spicy Thai Noodle Soup with prawns

Introduction

Warming and flavourfull thai noodle soup Warming and flavourfull thai noodle soup
Number of Servings: 3

Ingredients

    1 onion - finley chopped
    1 inch root ginger finley chopped
    3 cloves garlic- crushed/chopped
    1/2 pepper finely chopped
    1/4 head broccoli finely chopped
    1/2 courgette finely chopped
    2 layers medium egg noodles
    1 can light coconut milk
    1/2 litre chicken or veg stock

Directions

heat oil in pan
add garlic, giner and onion to sofetn
add chilli flakes to flavour

after veg softened add peppers and carrots to fry for a while
once softened add coconut milk and stock
add final veggies and allow to simmer for about 10 mins
finally add noddles until cooked - about 5 mins
garnish with spring onions and peanuts - EAT!
