Ingredients

2 poached eggs
1 slice whole grain bread (I like Brownberry Double Protein)
1 thick slice of tomato
pinch of shredded Italian cheese - less than a teaspoon
pinch of chopped fresh herbs (oregano or basil)
Directions
Poach 2 eggs for 4-5 minutes. Turn broiler on.
Toast bread and top with a thick slice of tomato. Add poached eggs and cheese. Broil until cheese is melted.
Top with fresh herbs.
