Curried Cauliflower

Introduction

This starts as 16 cups of veggies in the pot - so split it into 8 servings and they net 2 cups of veggies each! This starts as 16 cups of veggies in the pot - so split it into 8 servings and they net 2 cups of veggies each!
Number of Servings: 8

Ingredients

    5 c. cauliflower in small pieces
    1.5 c. tomato chopped
    7 c. cabbage shredded
    1.5 c. snow peas
    1 c. red onion finely chopped
    1 clove garlic
    1 Tbsp chopped fresh cilantro leaves
    1/2 tsp ginger
    1/2 tsp turmeric
    1/2 tsp cayenne
    1/4 tsp cinammon
    1/2 tsp coriander
    1/2 tsp mustard seed


Directions

Put all spices together in a bowl
Heat pan and add onions - once they soften add the spice and blend for a minute. Add tomatoes, blend.
Add the rest. Put on the lid and cook over medium or low medium - checking/stirring every 10 minutes.

Makes 8 servings

  • Recipe didn't mention oil for saute onion so I sauteed in veg broth. Increased spices. Other than that, delish. Added chick peas, black beans, or leftover chicken to some servings to add protein. - 3/18/11

    Thanks! I don't use oil for the onions - and veggie broth is a great idea! We love adding meat to the leftovers - I'll have to try the chick peas. Sound yummy!
