Single Serving Cream of Corn Soup

Ingredients

    1/2 teaspoon olive oil
    1/4 cup minced onion
    1/4 cup minced celery
    1 cup milk
    1 tablespoon white flour
    1 teaspoon instant vegetable broth powder
    1/2 cup canned corn, drained

Directions

1. In a large nonstick frying pan, heat the oil and saute the onion and celery until the onion is transparent and just beginning to brown.

2. Meanwhile, put the milk, flour, and vegetable broth powder in a blender and blend until smooth. Add the corn and blend for a few seconds until the corn is in small pieces.

3. Add the corn mixture to the hot pan all at once, turn the heat up to high, and stir continuously while the soup comes to a boil.

4. Turn the heat down and, stirring occasionally, let the soup simmer for 5 minutes. It is now ready to serve or cool before packaging to take to work for lunch.
