Grape Tomato and Avocado Salad

Introduction

Great on the go summer salad. Make up to 4 hours in advance, but I am always eating it the next day. Great on the go summer salad. Make up to 4 hours in advance, but I am always eating it the next day.
Number of Servings: 6

Ingredients

    1 pint grape tomatoes, halved
    1/2 cup chopped flat leaf parsley or cilantro or mixture
    1 Tbsp evoo
    1 tbsp lemon juice
    2 avocados chopped
    High quality salt, such as fleur de sel

Directions

In glass bowl toss together first 4 ingrediants. Add avocados and salt and toss gently. Chill if not serving immediately.

Makes 6 3/4 cup servings.
