Number of Servings: 6

Ingredients

    1 cup Quick 5 minutes Grits
    2 1/4 cups Water
    2 cups Milk (this recipe uses 1%; adjust calories for substitutions)
    1 tsp. salt
    1 clove garlic chopped fine
    1 small onion (rough chopped)
    1/2 cup sweet red pepper (rough chopped)
    1/2 cup bell pepper
    2 tbls pimento (optional)
    4 slices American Cheese (melts great in the grits)

Directions

Rough chop onion, garlic, peppers (just use whatever you have; sometimes we use sweet red and bell pepper, depends on what's handy) and saute til just soft in a couple of tbls. smart balance butter spread. In medium sauce pan, bring water and milk up to a boil. (note: recipe calls for 1% milk, so change calories based on what you're using- extra decadent with whole milk for sure). Slowly stir grits into pot just as the milk and water begin to come up to a boil. Reduce to medium heat. Add the sauteed veggies and salt (to taste) , and stir FREQUENTLY. Cook 4-5 min. until thickened and stir in slices of american cheese before serving. The plain processed american cheese works great in grits as it melts beautifully.

You'll get raves on these! And you can make them a million different ways depending on the veggies and types of cheese you add. Yes, it's got fat and sodium, but if you're gonna eat grits you might as well enjoy this somewhat healthy version (not full of full fat cream, butter, garlic salt, etc)
