Summer Potato, Zucchini, Onion Hashbrowns

Ingredients

    2-3 fresh red potatoes
    1/2 a medium onion
    about a cup of sliced fresh zucchini
    2 tbls. olive oil
    Salt and pepper to taste

Directions

Wash and rough chop potato, zucchini and onion. Sautee in olive oil and cook til crisp tender. Salt and pepper to taste. Drizzle with a lemon juice or ketchup. Enjoy!
